Anna Dawson, retired farmer, Family & Consumer Science teacher and community scale food processor shares her Freezer Meal Kit concept with teachers, culinary students and food entrepreneurs. She has spent over ten years exploring freezing and vacuum packaging local foods for frozen quick breads, soups, stir fry meals, crock pot meals, veggie burgers, fruit sauces and fruit compotes for individuals, families and small group feeding sites. A color laser printed card stock label provides a picture of the finished product, nutrition information and directions that teach consumers how to use the products. Local donated, cosmetically challenged, unsold farmers market produce or stored produce are used to transform potential food waste into freezer meal kits that are superior to store freezer brands.
